This weekend was a friend’s birthday party in Al Ain. I wanted to do something nice other than just show up and crash at her house. So, I offered to bake a birthday cake as it has been a while since I have done some baking. Since she is also doing a Paleo way of life, I found a few recipes that looked promising.

The last pic was of the trial cake. R asked for a special one for us at home and it was a good opportunity to test it out before serving it to people. In the end, it was delicious. The coconut flour gave it a coconut flavor and aside from icing sugar, there was no other sugar used, instead it was maple syrup and honey. So, it seemed to be a huge hit and I will probably use it again for future sweet-tooth satisfying endeavors. π
